Fish Müllerin style

Ingredients for 4 servings:

  • 4 fish fillets, thick, white, e.g. cod, horse mackerel, meagre
  • some flour
  • some oil for frying
  • 125 g butter
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped
  • some black pepper
  • e.g. lemon(s)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Fast

Lightly coat the fish in flour and tap off any excess. Heat oil in a pan and cook the fish for 5-8 minutes on each side (cooking time depends on the thickness of the fish) until lightly golden brown. Remove from the pan and keep warm. Wipe the pan clean and melt the butter over high heat. Remove from the heat and immediately add lemon juice, parsley, and pepper. Pour over the fish. Garnish with lemon wedges and serve.
