Fish soup with rice

Ingredients for 4 servings:

  • 3 onions
  • 3 stalk(s) Celery
  • 1 tbsp oil
  • 1 cup rice
  • 1 liter of fish broth (homemade or water with paste or cubes)
  • 500 g fish fillet(s) (e.g. plaice or cod)
  • 1 tsp turmeric
  • 1 tsp paprika powder
  • 1 tsp curry powder
  • 2 tbsp parsley
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the onions and celery and sauté in oil. Add the rice and let it soften, then deglaze with the fish stock. Add the spices and let the stock simmer for 10-15 minutes. Cut the fish into thin, bite-sized pieces, add to the soup, and let it simmer for 4-5 minutes. Season the soup to taste, sprinkle with finely chopped parsley, and enjoy.
