Ingredients for 4 servings:

  • 250 g cod fillet(s)
  • ¼ liter fish broth
  • 1 bunch of dill
  • 1 tbsp lemon juice
  • 2 tbsp crème fraîche
  • 1 pinch(s) of cayenne pepper
  • salt and pepper
  • ½ tsp sweet paprika powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the cod fillets in cold water and, if necessary, remove any bones using tweezers. Bring the fish stock or water with the spices to a boil in a small saucepan. Add the cod and cook over low heat for about 5 minutes, until it flakes when touched with a fork. Remove the fish fillets from the fish stock and drain well. Wash the dill, shake dry, and remove any coarse stalks. Finely chop about two-thirds of the dill, setting the remaining sprigs aside for garnishing. Puree the cod fillets in a blender or chop finely. Then mix in a bowl with the lemon juice, dill, and crème fraîche. Season the spread to taste with cayenne pepper, salt, and pepper. Dust the fish spread with paprika and serve garnished with the remaining dill sprigs. It goes well with toast or white bread.
