Fish with onions and tomatoes

Ingredients for 4 servings:

  • 1,250 g fish fillet(s)
  • 6 tomatoes
  • 6 m.-sized onion(s)
  • 2 tbsp breadcrumbs
  • 1 lemon(s)
  • 4 tbsp oil (olive oil)
  • 1 tbsp butter
  • Garlic granules
  • Parsley
  • pepper
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the onions, slice them into rings, and fry them lightly in hot oil until golden brown. Finally, season lightly with garlic granules to taste. Freshly crushed garlic can also be used—again, to taste. Place the portioned fish fillet, marinated in salt and lemon, in a buttered, ovenproof dish, then arrange the fried onion rings on top. Cover everything evenly with tomato slices sprinkled with salt and pepper and plenty of chopped parsley. Sprinkle everything with breadcrumbs, place a few knobs of butter on top, and bake in the oven for about 15 to 20 minutes (approx. 180°C in an electric oven, fan assisted). Serve with rice and a cold beer.
