Fish with potatoes, garlic, parsley and olive oil

Ingredients for 4 servings:

  • 1 m.-sized fish
  • 700 g potatoes
  • 2 bunch parsley, flat
  • 2 cloves garlic
  • 12 tbsp olive oil
  • Salt
  • pepper

Peel the garlic and finely chop it along with the parsley. Then mix it with the oil, salt, and pepper to make a marinade. Don’t skimp on the oil. Brush the cleaned fish inside and out with 1/3 of the marinade and let it sit for a while. Cut the potatoes into thin slices and place them on a greased baking sheet, leaving a space in the middle free for the fish. Season the potatoes with salt and pepper and brush them with almost all of the remaining marinade. Bake in a preheated oven at 175°C for about 15 minutes. Remove the baking sheet with the half-cooked potatoes and add the fish, then brush with the remaining marinade. Then return it to the hot oven for another 20 minutes, until the fish is cooked through. Serve with lemon wedges and a green salad. White wine goes well with this recipe. The recipe is incredibly simple because you can prepare everything on one baking sheet. However, I recommend using a few more potatoes (they taste amazing) and then dividing the whole thing between two baking sheets. Once it’s ready, you can spread the potatoes on a large serving platter and place the fish on top; it looks quite spectacular. Fish fillets also work, but you’ll need to leave the potatoes in the oven a little longer, otherwise the fish will overcook.
