Ingredients for 1 servings:
- 2 eggs
- 1 pinch of salt
- 750 g low-fat curd cheese
- 125 g erythritol (sugar substitute) or xylitol sugar
- 1 tsp lemon zest
- 1 packet of vanilla pudding powder
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes
Preheat the oven to 180°C (top/bottom heat). Beat the eggs with a pinch of salt until frothy, add the remaining ingredients, and mix with a hand mixer on low speed. Pour the mixture into a 24cm springform pan lined with baking paper. Bake in the preheated oven for approximately 60 minutes (use a toothpick to check if the cake is cooked through!).
