Ingredients for 2 servings:
- 300 g turkey meat, shredded
- some oil for frying
- ½ bunch arugula
- ½ lettuce(s)
- n. B. Mushrooms, white, fresh
- 50 g cheese (Grana Padano)
- 1 handful of seeds (pine, sunflower, pumpkin seeds)
- 1 pinch(s) of salt and pepper
- 1 pinch chili flakes (Pul Biber)
- ½ lemon(s), the juice
- 4 tbsp extra virgin olive oil
- 4 tbsp mineral water
- 2 tbsp Balsamic vinegar bianco
- 1 tsp honey
- 1 some thyme, fresh
- 1 tsp tomato paste
- 1 tsp mustard
- some oregano, fresh
- some basil, fresh

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Clean the vegetables and chop everything except the arugula, and set aside. Wash the meat, pat it dry, and then cut it into roughly 2 cm cubes. Season with oil, pepper, and Pul Biber (a type of flour) and marinate for 1-2 hours if possible. Sear the meat until crispy, then add a little salt. Add the nuts to another pan and toast them briefly with a pinch of salt to bring out the flavors. For the vinaigrette, mix together the oil, water, balsamic vinegar, thyme, oregano, basil, honey, tomato paste, and mustard, and season with lemon juice, pepper, and salt. Arrange the salad on a plate. Add the turkey cubes and toasted seeds in portions, and grate Grana Padano over the top. This goes best with flatbread or ciabatta lightly toasted with olive oil and salt.
