Ingredients for 1 servings:

  • 150 g cereal flakes (5-grain flakes)
  • 600 g flour (type 550)
  • 21 g yeast
  • 20 g butter
  • 360 ml milk or buttermilk
  • 10 g salt
  • 5 g sugar

Place the 5-grain flakes in a bowl, add warm water until the flakes are covered, cover the bowl, and let stand overnight. The next day, place the flour, salt, sugar, butter, and flakes in the bowl of a food processor, crumble the yeast over the flakes, and pour in the lukewarm milk or buttermilk. Turn on the food processor and knead for 5-10 minutes until you have a smooth dough. Pour the dough into a greased 34 cm bread pan and let it rise in a warm place until it reaches the edges of the pan. Bake the bread in a preheated oven at 220°C for 5 minutes, then reduce the temperature to 180°C and bake for 50 minutes. The sandwich bread is beautifully fluffy and not at all dry, and it also toasts beautifully.
