Flamed Wood-fired Rye Bread with Onion Jam & Plum Honey

The perfect flamed wood-fired rye bread with onion jam & plum honey recipe with a picture and simple step-by-step instructions.

Onion jam:

  • 8 Pc. Onions
  • 2 Pc. Bay leaves
  • Sugar
  • Pepper
  • Salt
  • Butter
  • Marjoram
  • Caraway seed
  • Roasted onions
  • 5 Sch. Plum Bamees
  • Chives
  • Greek yogurt
  • Breadcrumbs
  • Pickled vegetables
  • Cress

Onion jam:

  1. Peel the onions and cut into slices. Heat a pan with butter, add the onions. Add the bay leaves, sugar, salt and pepper. Let simmer for a few minutes, if necessary deglaze with more butter. Season with marjoram and caraway seeds. Then add 1 tbsp starch water. Bring to the boil briefly and then let cool down. Put something into the fridge.

Serve:

  1. Toast the bread slices in the pan until golden brown. Top with the braised onions, fried onions, plum loaves and chives.
  2. Pour Greek yogurt into a plate and sprinkle with breadcrumbs. Serve with the pickled vegetables, the bread slices and three kinds of cress.
