Flamed Wood-fired Rye Bread with Onion Jam & Plum Honey
The perfect flamed wood-fired rye bread with onion jam & plum honey recipe with a picture and simple step-by-step instructions.
Onion jam:
- 8 Pc. Onions
- 2 Pc. Bay leaves
- Sugar
- Pepper
- Salt
- Butter
- Marjoram
- Caraway seed
- Roasted onions
- 5 Sch. Plum Bamees
- Chives
- Greek yogurt
- Breadcrumbs
- Pickled vegetables
- Cress
Onion jam:
- Peel the onions and cut into slices. Heat a pan with butter, add the onions. Add the bay leaves, sugar, salt and pepper. Let simmer for a few minutes, if necessary deglaze with more butter. Season with marjoram and caraway seeds. Then add 1 tbsp starch water. Bring to the boil briefly and then let cool down. Put something into the fridge.
Serve:
- Toast the bread slices in the pan until golden brown. Top with the braised onions, fried onions, plum loaves and chives.
- Pour Greek yogurt into a plate and sprinkle with breadcrumbs. Serve with the pickled vegetables, the bread slices and three kinds of cress.
