Flan with marinated berries

Ingredients for 4 servings:

  • 250 ml milk
  • 150 ml cream
  • 1 vanilla pod(s)
  • 4 eggs
  • 80 g sugar
  • 1 packet of vanilla sugar
  • 500 g mixed berries, e.g. blackberries, raspberries, currants, blueberries
  • 1 lemon(s)
  • 3 tbsp sugar
  • 3 tbsp pistachios, chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 45 minutes; Total time approx. 4 hours 5 minutes

Preheat oven to 160 degrees Celsius. For the flan, bring the milk to a boil with the cream, vanilla seeds, and vanilla pod, then set aside. Whisk the eggs with the sugar and vanilla sugar. Add the still-hot vanilla milk to the egg mixture, whisk well, and pour the mixture through a sieve into the molds. Place the molds in a roasting pan or casserole dish, add water to reach 2/3 of the height. Cover the molds with aluminum foil and let the flan set in the oven for 35-45 minutes. Remove from the oven and let cool. Chill for 2-3 hours. Mix the pistachios with 2 tablespoons of lemon zest and 2 tablespoons of sugar (if you like, you can also grind them in a food processor) and set aside. Mix 1 tablespoon of sugar and 2 tablespoons of lemon juice with the berries, cover, and marinate in the refrigerator for 1-2 hours. Serve the flans on dessert plates with the berries and pistachios.
