Ingredients for 1 servings:

  • 225 g oat flakes, fine
  • 85 g sugar, brown
  • 150 g butter
  • 2 tbsp beet syrup
  • 1 tbsp mixed seeds (sunflower seeds, sesame, etc.)
  • 3 tbsp cranberries, dried, alternatively raisins or dates

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Combine the oats and brown sugar, add the seed mix (depending on your preference), and mix. Then add the cranberries (if you don’t have any on hand, you can use raisins or chopped dates). Melt the butter in a saucepan and heat it together with the beet syrup (do not boil). Then pour it over the oat mixture and mix well. Pour the mixture into a cake pan, spread it out (about 1-1.5 cm thick), and press it down firmly. Bake at 160°C (320°F) for 10-20 minutes until golden brown, depending on whether you want it crispy or chewy (you’ll have to experiment). Flapjack is an English teacake; the original consists only of syrup, butter, and oats.
