Ingredients for 2 servings:

  • 600 g flour
  • 25 g yeast or 1 packet of dry yeast
  • 2 tsp, heaped salt
  • 330 ml milk, lukewarm
  • 100 ml water, lukewarm
  • 20 g butter, soft
  • 10 g sugar
  • 2 tbsp mashed potato powder
  • sesame
  • Caraway seeds
  • poppy

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Using the dough hook on a food processor, combine the first 8 ingredients into a smooth dough; cover and let rise in a warm place for about 30 minutes. Then shape the dough into two flatbreads. Place on a baking sheet lined with baking paper and let rise for another 30 minutes. Meanwhile, preheat the oven to 220°C (425°F). Fill a roasting pan with about 1 liter of boiling water and place it on the floor of the oven. Brush the flatbreads with water, sprinkle with sesame seeds, caraway seeds, and poppy seeds, and place in the oven. Bake for about 20 minutes until light brown. Important: Do not open the oven door for at least the first 10 minutes! After baking, let the flatbreads cool on a wire rack.
