Ingredients for 4 servings:

  • 300 g flour (wheat flour)
  • ½ cube of yeast
  • 1 tsp sugar
  • ⅛ liter of water, lukewarm
  • 2 tbsp yogurt
  • 4 tbsp olive oil
  • Salt
  • 100 g sheep’s cheese
  • 2 cloves garlic
  • coriander
  • Caraway, ground

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Pita

Mix the yeast with the sugar and water. Mix the flour with all the other ingredients, add the yeast solution and knead thoroughly. The dough should have a soft consistency. Place the dough in a wet cloth and let it rise until doubled in size. Divide the dough into four equal portions and form flatbreads. Place on a baking sheet lined with baking paper, let rise again and bake at 200 degrees Celsius. Once the oven is heated, pour a cup of water into the oven so that it steams (close the oven quickly to keep the steam in). After 10 minutes of baking, reduce the heat to 180 degrees Celsius and bake for another 20 minutes. Mash the feta cheese with a little oil and season with paprika and garlic. About 10 minutes before the end of the baking time, spread it on top of the flatbreads in the center.
