Ingredients for 8 servings:
- 350 g flour
- 1 tsp salt
- 3 tbsp vegetable oil
- 250 g butter, soft
- Water, for the dough
- Oil, for frying

Mix the flour and salt in a large bowl. Add the oil and use your fingertips to rub it into fine crumbs. Add enough water to make a soft, pliable dough. Roll out the dough on a floured surface into a rectangle (approx. 25cm x 35cm). Brush the dough with softened butter and shape it into a log. Cover with a cloth and let it rest for 30 minutes. Tear off pieces of the dough and shape them into tennis ball-sized balls. Roll each ball out to the size of a plate and fry in hot oil for approx. 2 minutes on each side. In Africa, roti is served with warm curries. You break off small pieces of the flatbread and use them to scoop up the meat and sauce.
