Flemish noodle soup

Ingredients for 4 servings:

  • 1 chicken
  • 1 soup greens (celery, carrot, leek, parsley)
  • 300 g beans, green, fresh or frozen
  • 1 tsp savory
  • 150 g tagliatelle pasta
  • 150 g crème fraîche
  • salt and pepper
  • some sauce thickener

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Place the chicken, without giblets, in a pot and fill with enough water to completely cover. Add the cleaned vegetables. Simmer for approximately 20-30 minutes, then remove the chicken and cut into bite-sized pieces. Strain the stock, return it to the pot, and bring back to a boil. Cook the beans and pasta until tender. If using frozen beans, add them 2-3 minutes before the pasta. Add the chicken pieces to the soup and heat through. Add the crème fraîche. Thicken with a little sauce thickener and season to taste with salt and pepper.
