Ingredients for 4 servings:
- 1 kg minced beef
- 3 eggs
- 3 eggs (hard boiled)
- 3 tbsp clarified butter
- 2 garlic cloves (or garlic paste)
- 1 roll (stale)
- 3 onions
- 1 bay leaf
- 2 carrots
- 4 tbsp chives, in rolls
- 2 tbsp parsley, chopped
- Breadcrumbs
- Salt
- pepper
- Fat, Culinesse for greasing the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes
Soak the bread rolls in water and squeeze out excess moisture. Peel and finely dice the onions and carrots. Sauté them in clarified butter with the garlic and bay leaf. Remove the bay leaf. Knead the onions and carrots with the remaining ingredients—except the boiled eggs—to form a smooth dough. Season with salt and pepper. Pour half of the dough into a greased and breadcrumb-lined loaf pan. Peel the eggs, lightly press them into the dough, and cover with the remaining minced meat. Press down lightly and smooth the surface. Place the roast in the middle rack of an oven preheated to 160°C and cook for approximately 1 hour, depending on the oven. Check the roast’s doneness with a wooden skewer occasionally.
