  • 4 rolls, stale
  • 4 eggs
  • 1 tsp salt
  • Flour, as needed

a Franconian side dish

Preparing “Mehlknöpfla” is very simple: Cut the bread rolls into small cubes and place them in a bowl. Mix in the eggs and salt, then stir in enough flour to make a not-too-stiff dumpling dough. Let the dough rest for a while (about 15-30 minutes). Meanwhile, boil a pot of salted water. When the water boils, use a tablespoon to scoop out dumplings from the dough and let the Knöpfla rest for about 10-15 minutes, rather than boiling. Knöpfla are a delicious side dish to goulash and other dishes or to sauerkraut. We also like them with braised ribs with sauce!
