Fluffy Almond Pancakes

Ingredients
 

  • 2 small Eggs separated
  • 1 pinch Salt
  • 1 tsp Sugar
  • 50 g Ground almonds
  • Butter
  • Powdered sugar

Instructions
 

  • Beat the egg whites with salt until stiff, carefully mix in the sugar, egg yolks and almonds
  • Melt some butter in a small pan and pour the dough in completely, let it set over medium heat, then turn it carefully and let some more butter run down the edge
  • The pancake is ready when it bounces lightly at the touch of a finger
  • Place the pancakes on a plate and dust them lightly with powdered sugar

tip

  • I prefer to eat the almond pancake with some fruit ..... and what I like best is that it is a pure protein dish - ideal as a light dinner for those who want to avoid carbohydrates in the evening
