Ingredients
 

  • 4 large Potatoes
  • 4 tsp Olive oil
  • 4 sprigs Rosemary fresh
  • 4 sprigs Fresh thyme
  • 250 g Low-Fat quark organic
  • 150 g Organic yogurt
  • 0,5 Diced onion
  • 1,5 tbsp Olive oil
  • 2 tbsp Pickle juice
  • 0,5 Cucumber salad
  • 1 tsp Garlic paste (see recipe)
  • 1 tbsp Herb vinegar
  • Salt
  • Black pepper from the mill

Instructions
 

  • Preheat the oven to 200 ° C.
  • Cook the potatoes in boiling water for 10 minutes.
  • 4 Cut aluminum foil to size. Cut a deep cross into each potato and add a teaspoon. Put the olive oil on the foil. Place the cooked potatoes on top, place the thyme and rosemary on the side, then close the foil and place all 4 potatoes in the preheated oven on a rack and cook for 60 minutes.
  • To Tsatsiki:
  • Coarsely grate half of the cucumber. Dice the onion.
  • Put the organic quark and organic yoghurt in a bowl, add the olive oil, pickle juice, herb vinegar, black pepper from the mill, salt and garlic paste (see recipe)
  • Mix everything well, stir in the grated cucumber and diced onion.
  • Open the cooked foil potatoes and fill the tsatsiki into the cut cross.
