Canadian Apple Pancakes with Cranberries

For the dough
- 200 ml Milk
- 150 g Flour
- 3 Egg yolk
- 3 Egg white
- 1 pinch Salt
- 1 tsp Baking powder
- 1 tbsp Sugar
For the filling
- 2 Apples Breaburn, Elstar, no Boskoop
- 60 g Dried cranberries
- 2 tbsp Sugar
- 3 tbsp Calvados, or Armagnac, or rum to deglaze
- 3 tbsp Clarified butter
- Approx. 80 ml vegetable oil to fry.
- Mix egg yolks with sugar until creamy and whip with milk.
- Mix the flour, baking powder and a pinch of salt. Add this mixture to the milk while stirring. Let stand for 15 minutes.
Caramelize the apples in a pan
- Cut the apples into slices, glaze in the butter and then caramelize with sugar. Add about 20 g of cranberries. Deglaze with calvados. Allow to cool slightly.
- Now place the cooled apple slices in the dough, beat the egg white and fold in. Now heat the pan again and add the dough to the pan, decorate with about 5 cranberries. Heat, the cakes will turn brown quickly.
