Ingredients for 4 servings:
- 2 eggs, hard-boiled
- 1 tsp mustard
- 1 dl oil
- 1 tsp vinegar
- 2 small cucumbers
- 1 shallot(s)
- 1 tsp capers
- Parsley
- tarragon
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Mix the beaten egg yolk with the mustard thoroughly, then stir in the oil drop by drop. As with mayonnaise, the sauce will thicken. Stir in the vinegar. Finely chop the cucumbers, shallots, capers, and herbs, mix in, and season with salt and pepper.
