Ingredients for 2 servings:
- 1 bratwurst, from the day before (fresh ones too, of course)
- 1 small zucchini
- 1 large onion(s), red, if available
- 1 handful of peas, frozen
- 1 cup rice
- salt and pepper
- curry powder
- some oil
- some parsley, chopped, or dill
- 2 gherkins

Tasty and quick use of leftovers
Wash the rice until the water runs clear, then add twice the amount of water to the pan and bring to a boil. Stir and cook until the water has almost evaporated. Then cover and let it swell. Cover the pot with some kitchen towels, turning off the heat first, of course! Dice the onion into noodles and the zucchini and sausage into small cubes. Fry the sausage pieces in a little oil until crispy, remove from the pan, and set aside. Briefly fry the onion, add the zucchini pieces, and cook until golden brown in places. Reduce the heat to low and add a handful of peas, mix, cover, and heat gently until piping hot. When everything is hot and cooked through, stir in roughly the same amount of rice. Season with salt and pepper, stir in the crispy sausage pieces, and finally add a handful of chopped parsley or dill. Stir, divide among the plates, and sprinkle with a little curry powder. Garnish with a fan cucumber, dill, or parsley sprigs and serve immediately hot. Serve with a green salad.
