Four-layer casserole

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 250 g mushrooms
  • 2 tbsp olive oil
  • 2 bell peppers, green and yellow
  • 2 tbsp ham, diced
  • 1 m.-sized onion(s)
  • 3 tbsp cream (cooking cream, 15%)
  • 2 garlic cloves
  • ½ tsp chili flakes
  • Thyme
  • 100 g mozzarella, grated
  • salt and pepper

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and trim the zucchini, and slice thinly. Trim and deseed the bell peppers, then slice into approximately 1 cm strips. Wipe the mushrooms dry and slice. Peel and finely chop the onion and garlic. Heat oil in a pan and sauté the onion and garlic until translucent. Add the diced ham, chili, and thyme, and continue to fry briefly. Then set aside. Brown each of the other vegetables separately and set aside. In a casserole dish, layer the bell peppers, then the zucchini, then the onion, garlic, and ham mixture, and finally the mushrooms. Sprinkle with grated cheese and pour the cooking cream over everything. Microwave for 3-4 minutes at 1,200 watts.
