Ingredients for 4 servings:
- 8 herring fillets in oil
- 2 apples (e.g. Jona Gold)
- 2 onions
- 4 gherkins (sweet and sour)
- 4 tbsp capers
- 4 tbsp cranberries (wild cranberries)
- 200 g sour cream
- 200 g crème fraîche
- 200 g sour cream
- 2 tbsp oil (e.g. Mazola germ oil)
- Salt
- Pepper, black from the mill
- bunch of dill
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes
Cut the herring fillets into approximately 2 cm wide pieces. Cut the apples into eighths, remove the cores, and dice them. Dice the onions. Dice the gherkins. Place everything in a bowl with the capers and mix well. Place the crème fraîche, sour cream, and cranberries in a mixing bowl, add salt and freshly ground pepper, and mix well. Add 2 tablespoons of oil to make the sauce a little thicker. Mix the sauce with all the other ingredients and refrigerate overnight. The next day, taste and season with salt and pepper if desired, and garnish with fresh dill. Serve with boiled potatoes and a cold beer.
