Ingredients for 4 servings:

  • 1 package of ready-made mix for white bread (500 g)
  • 1 lemon(s)
  • 120 g sugar
  • 2 tsp cinnamon
  • 60 g butter

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Prepare the bread dough according to the instructions and let it rise in a warm place for 40 minutes (tip: cover and let it rise in a slightly open oven at 50°C; it then takes only half as long). Mix the lemon zest with the sugar and cinnamon. Melt the butter and let it cool. Knead the dough on a floured work surface and roll it out (approx. 50×30 cm). Brush the dough with half of the butter and sprinkle with some of the sugar mixture. Roll up the dough longwise. Cut the roll in half, place one half in a greased loaf tin, sprinkle some butter and the remaining sugar mixture over it. Place the other half of the dough on top and flatten it slightly. Cut a line lengthwise with a knife so that both ends hold together and sprinkle the remaining butter over the top. Cover the tin and let it rise for another 30 minutes (only half as long in the oven!) Bake the bread in a hot oven at 250°C for 35 minutes! Turn the bread out onto a rack and bake with the bottom facing up for a further 10 minutes! Serve warm or cooled later. Tastes like a homemade Franzbrötchen! Great for brunch or just on its own!
