Frauke's pasta salad with arugula, Parmesan, pine nuts

Ingredients for 4 servings:

  • 500 g pasta, e.g. penne rigate
  • 200 g Parmesan
  • 1 bag of arugula
  • 80 g pine nuts
  • 3 bags of ready-made salad mix (Italian style)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

No mayo – just salad dressing – ideal for grilling!

Cook the pasta according to the package instructions. Meanwhile, wash and dry the arugula and grate the Parmesan cheese. After cooking, let the pasta cool slightly. Toast the pine nuts until light brown. Mix the salad dressing according to the package instructions (we like to use olive oil). Toss the pasta with the dressing, arugula, and Parmesan cheese, then fold in the toasted pine nuts at the end. Tip: The salad also tastes delicious when the pasta is still slightly warm!
