Freddy's pears in Dornfelder filled with blue mushroom cheese cream

Ingredients for 4 servings:

  • 2 pears, fresh
  • ½ liter of wine, Dornfelder
  • 1 piece(s) cinnamon, whole
  • 3 carnations
  • 3 tbsp sugar
  • 200 g noble mushroom cheese (Bavaria Blue)
  • 100 ml cream
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and halve the pears, then remove the cores with a spoon. Bring the red wine to a boil with the cinnamon, cloves, and sugar. Add the hollowed-out pears, bring to a boil briefly, remove the pan from the heat, and let everything cool completely. For the filling: Strain the cheese through a fine sieve, mix with the cream until smooth, and season with pepper to taste. Pipe the cream into the halved pears using a piping bag and decorate.
