Freeze gooseberries: preparation

In order to freeze gooseberries, you need to prepare them. This will not spoil the flavor of the berries when they are thawed again. In addition, they are much easier to process.

  • Fill a bowl with lukewarm water. Put the gooseberries in the water and wash each berry individually.
  • After cleaning, the berries must be dried. This is the only way to prevent the fruit from icing, which has a major impact on its taste and quality.
  • Finally, remove the withered remains of the flowers and the stems. They are inedible and should not be frozen with gooseberries.

Freeze properly

To prevent gooseberries from clumping when frozen, you need to pre-freeze them. Pre-freezing ensures that the surface of the berries is sealed and they can no longer stick together. This makes it easier to use the gooseberries if you only want to defrost small quantities or even individual berries.

  • Place the gooseberries on a tray, grid, or something similar. The mat should fit in your freezer. Make sure the gooseberries are not touching.
  • Now pre-freeze the berries for a period of 2 hours. No longer needed for this step.
  • After 2 hours, transfer the berries to suitable freezing containers or freezer bags and place them back in the freezer.
  • Consume the fruit within 12 months.
