Fresh fish or meat tartare can be kept in the refrigerator for one to two days at the most. It is best to wrap the tartare in cling film to store it in the refrigerator.

  • To make your tartar last longer, you can simply store it in the freezer.
  • Storage in the freezer extends the shelf life to up to 3 months.
  • Divide the tartare into small portions and pack them airtight in cling film or freezer bags.
  • To thaw, simply place the tartare in the fridge. This way it can thaw slowly without being exposed to too much heat.
  • Defrosting in the refrigerator takes 6 to 12 hours, depending on portion size. If you want to eat the tartare the next day, it is best to put it in the fridge the night before.

Ideally, the taste of tartare is preserved when stored in the freezer. Once thawed, though, be sure to check carefully to make sure the tartare is still good.
