Freezing Arugula – You Should Know That

Only freeze arugula for specific purposes

If you have too much rocket to prepare fresh, you should never throw away the healthy salad. Arugula can be stored in the refrigerator, but only for a limited time. If you observe the following things, you can conserve it deep-frozen.

  • You can freeze arugula whole leaves. It is best to wash it beforehand and carefully pat it dry.
  • Then portion it into a bag or freezer container of about 50 to 60 grams and write the date on the packaging.
  • Place the arugula in the freezer. After a few hours, it is already well frozen. It should last about half a year.
  • The green leaves are then no longer suitable for preparing a fresh salad or for cooking. Like other salads containing water, arugula becomes very mushy after defrosting.
  • Alternatively, you can use the frozen rocket to prepare pesto or smoothies.
  • Expect that the typical arugula aroma will now be far less intense than with fresh leaves. This is even an advantage for some recipes.
  • To do this, chop the frozen leaves as soon as possible after removing them from the cold.
  • This can be done very quickly and easily with a blender, blender, or by hand with a chopping knife.
  • In chilled smoothies, you even save yourself the need to add ice cubes.

Use lettuce as a seasoning ingredient

To preserve the rocket from being deep-frozen, you can also chop the leaves immediately after washing and dabbing them dry and freeze them mixed with a little oil.

  • This variant is well suited if you want to use rocket as a spice when cooking – in butter, spreads, or quark, for example.
  • Chop or puree about 100 grams of rocket leaves together with two teaspoons of olive oil and a teaspoon of salt.
  • Spread the fibrous mass into an ice cube maker, pack it in a freezer bag or suitable box, and put the mass in your freezer.
  • Depending on your needs, you can now remove the small-portioned green flavor enhancers and use them for seasoning.
  • Due to the oil content, however, you should not freeze the rocket cubes for longer than about four months.
  • Tip: If you don’t want the fibers of the leaf stalk in your mass, you must remove them before chopping. It takes a lot of effort, but it’s worth it if you need a particularly fine consistency.
