French apple pie

Mix all the ingredients for the dough and knead carefully into a light dough. Roll them up in greaseproof paper and let them rest in a cool place for 1 hour. Wash the apples thoroughly, dry them, peel them, and reserve the peels. Quarter the apples, remove the cores, and cut them into even wedges about 0.5 cm thick. Roll out the dough until it covers a buttered springform pan all the way to the top. Arrange the apples in a circle, starting from the outside, like roof tiles. Use the smaller wedges for the inside. Place the pan in an oven preheated to 180°C for 30-35 minutes. Cover the peels with 4 tablespoons of water and simmer gently for 20 minutes. Strain them through a sieve, squeeze out any excess water, and mix well with the icing sugar. Combine this juice with the jam and melt it. Cover the finished cake with this juice.
