Ingredients for 1 servings:

  • 200 g flour
  • 50 g sugar
  • 1 pinch of salt
  • 100 g butter
  • 1 egg yolk
  • 750 g apples
  • 2 tbsp lemon juice
  • 2 tbsp sugar
  • 100 g apricot jam

FOR THE DOUGH: Place flour, sugar, and salt in a bowl. Cut the cold butter into pieces and add to the flour along with the egg yolk. Knead everything with your hands until you have a smooth dough. Shape the dough into a ball, wrap it in cling film, and refrigerate for 30 minutes. Preheat oven to 200°C. Grease a tart pan with butter. Roll out the dough on a floured surface and place it in the pan. Trim off any excess dough with a knife. The edges should be no more than 1 cm high. FOR THE FILLING: Wash, peel, and slice the apples. Toss the apple slices with lemon juice and sugar and fan them out over the dough. It’s best to start on the outside and work your way in. Bake the tart for 35-40 minutes, until the apples are soft and lightly browned. I recommend checking the oven every now and then. If the apple pieces start to brown on one side, simply rotate the pan a little. If they get too dark, you can cover them with aluminum foil towards the end. FOR THE GLAZING: When the tart is in the oven, heat the jam in a small saucepan. Spread it over the freshly baked tart.
