French toast with egg and green asparagus

Ingredients for 2 servings:

  • 4 slices of toast
  • 5 eggs
  • 150 ml milk
  • 100 g flour
  • 8 stalk(s) asparagus, green
  • some ham cubes
  • salt and pepper
  • nutmeg
  • 4 slices of cheese, spicy, e.g. Edam
  • Parmesan, grated
  • some cream cheese
  • 1 spring onion(s)

Boil 4 eggs, peel, and slice. Wash and slice the asparagus. Whisk together 1 egg, flour, and milk, and season with salt, pepper, and nutmeg. Soak the slices of toast thoroughly in the liquid batter and fry in a pan on both sides. Place a slice of cheese on each slice of toast, along with the raw asparagus and slices of boiled egg. Sprinkle with a few cubes of ham (you can omit them if you like) and a few flakes of cream cheese. Finally, sprinkle with Parmesan cheese. Bake on the baking sheet at 180°C for 15-20 minutes. After baking, sprinkle with the sliced ​​spring onions. Serve with hollandaise sauce or garlic yogurt, depending on your taste.
