Ingredients for 10 servings:

  • 125 g flour
  • 250 g sour milk
  • 2 egg yolks
  • ½ tbsp lemon peel, untreated, grated
  • 50 g sugar
  • 2 tbsp rum
  • Salt
  • 2 egg whites
  • Fat for the waffle iron

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the flour and sour cream thoroughly. Whisk the egg yolks with sugar, rum, a pinch of salt, and the grated lemon zest until frothy. Stir the mixture into the waffle batter. If the batter is too thick, add a little liquid. Beat the egg whites until stiff and fold into the batter. Let the batter rest for at least 30 minutes. Preheat and grease the waffle iron. Pour in just under 2 tablespoons of batter. Bake the waffles until light brown.
