Fresh, cheeky asparagus salad

Ingredients for 4 servings:

  • 1 kg asparagus, green
  • 300 g turkey breast slices or chicken breast roulade, thinly sliced
  • 1 onion(s), red
  • 1 pinch(s) of sugar
  • 1 pinch of salt
  • 6 tbsp olive oil
  • 4 tbsp balsamic vinegar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the asparagus as needed and trim off the cut ends. Cook in salted water with a pinch of sugar for 3-5 minutes until al dente, drain, and cut the asparagus into salad-sized pieces, along with the turkey. Dice the onion. Mix all the ingredients together and toss well with the olive oil and balsamic vinegar. You have a delicious, light spring salad.
