Ingredients for 4 servings:
- 3 garlic cloves
- 1 bunch of spring onions
- 2 tsp ginger
- 1 cucumber(s)
- 1.3 liters of vegetable broth
- 6 tbsp miso paste, light
- 3 tbsp soy sauce, light
- 300g tofu
- 4 tbsp coriander greens, chopped
- salt and pepper
- 2 tbsp lemon juice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
Finely chop the garlic, ginger, and spring onions. Peel the cucumber and slice thinly. Add everything to the vegetable broth. Add the miso paste and soy sauce and let it simmer for about 5 minutes. Dice the tofu and add it. Add the cilantro and season with salt, pepper, and lemon juice.
