Fresh couscous salad

Ingredients for 2 servings:

  • 100 g couscous
  • 150 ml broth, hot
  • ½ cucumber(s)
  • 3 cherry tomatoes
  • ½ bell pepper(s)
  • 1 spring onion(s)
  • 1 sprig of parsley
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Pour the broth over the couscous and let it simmer for about 5 minutes. Meanwhile, wash and finely dice the vegetables. Fluff the couscous and fold in the vegetables. Finally, chop the parsley and fold in. Season with salt and pepper, if desired. Perfect as a side dish, main course, or as a snack.
