Ingredients for 2 servings:
- 1 red bell pepper(s)
- 2 large carrots
- ½ cucumber(s)
- 1 handful of cherry tomatoes
- 200 g cottage cheese or cream cheese
- 1 dash of olive oil
- 1 shot of vinegar (brandy vinegar) or white balsamic vinegar
- black pepper
- herbal salt
- Herbs, fresh or frozen
Instructions
Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes
with cottage cheese
Cut the red bell pepper, cucumber, and carrots into bite-sized pieces. Mix in a bowl and season with black pepper. Now combine the cottage cheese, vinegar, olive oil, herb salt, and herbs and stir into the salad. Let it sit for a while. Halve the tomatoes and stir them in just before serving. In winter, when the tomatoes have little flavor, I add a little salt to the halves. But that’s up to you.
