Quick, tasty and inexpensive fish recipe

It’s best to have the fresh mackerel cut into fillets at the store. Season the mackerel fillets with salt and pepper and coat them in flour. Then shake off any excess flour. Now finely dice the garlic and fry in olive oil in a small pan or saucepan until golden. Then add the soy sauce and the either grated or very finely chopped ginger and let everything simmer for a while. You can add salt and pepper to taste, but the salt content from the soy sauce is usually sufficient. Now fry the mackerel fillets in another pan. Don’t overcook it; ideally, only cook for about two minutes on each side. Then arrange the mackerel on a plate and drizzle with the sauce. Finally, garnish with the finely chopped chili pepper and some parsley. It goes well with baked potatoes or rice. We were immediately impressed with this recipe from a Spanish magazine, even though I don’t really like mackerel that much. But this recipe has now become our standard mackerel recipe.
