Fresh melon salad

Ingredients for 6 servings:

  • ½ watermelon(s)
  • 250 g feta cheese
  • ½ cucumber(s)
  • 2 spring onions, possibly 3
  • e.g. parsley
  • e.g. mint
  • 1 tbsp olive oil
  • 1 tbsp Balsamic vinegar Bianco
  • Lemon juice, freshly squeezed
  • salt and pepper

Working time approx. 20 minutes; Rest time approx. 20 minutes; Total time approx. 40 minutes

Mediterranean, vegetarian and super simple

Peel the watermelon and, if present, remove the seeds. Then dice the melon. Dice the feta cheese and cucumber. Finely slice the spring onions and finely chop the parsley. I highly recommend chopping and adding some mint as well; it makes the salad even fresher and is especially delicious in summer. Of course, the amount can be adjusted to your taste. Whisk together the olive oil, white balsamic vinegar, a few squeezes of fresh lemon juice, salt, and pepper. Then mix all the ingredients together, season to taste, and refrigerate for about 20-30 minutes or until ready to serve. Enjoy the salad chilled on hot summer days.
