Fresh summer salad

Ingredients for 2 servings:

  • 100 g grapes, white
  • 100 g cocktail tomatoes
  • 100 g lamb’s lettuce
  • 100 g cheese (Emmental or Gouda), in one piece
  • 1 tbsp Aceto balsamico, good
  • 1 tbsp orange juice, freshly squeezed
  • 1 tbsp walnuts
  • 1 tsp, heaped pepper, coarse
  • 1 pinch of salt
  • 2 tbsp olive oil or hemp oil or other good quality nutty oil

Wash the lamb’s lettuce, drain, and place in a bowl. Chop the cheese, cherry tomatoes, and grapes into small pieces and mix with the lamb’s lettuce. Season with pepper and a little salt to taste. Finally, drizzle the balsamic vinegar, then the olive oil, and finally the orange juice over the salad, tossing thoroughly. Garnish with a few chopped walnuts. It’s easy to make and tastes very fruity. Serve best with a fresh baguette and a glass of grape juice spritzer. A few tips for preparation: When chopping, make sure the grapes, tomatoes, and cheese are roughly the same size; I find this creates the most balanced flavor. If you prefer a sweeter salad (or picked sour grapes), skip the balsamic vinegar and finish the salad with a bit of honey or maple syrup. If you prefer a sour salad, simply use more vinegar and perhaps squeeze a lemon over the salad.
