Fresh tomato sauce

Ingredients for 3 servings:

  • 500 g tomatoes, ripe
  • 2 medium-sized onions, finely chopped
  • 2 cloves garlic, finely chopped
  • some olive oil
  • 1 bunch parsley, slightly chopped
  • some thyme, amount according to taste
  • 2 bay leaves
  • 30 g flour
  • 30 g butter
  • some salt and pepper
  • some sugar
  • Mixed herbs, as desired

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the onions and garlic in a little olive oil, add the herbs and dust with flour, mix briefly, and then add the washed and quartered tomatoes. Cover and simmer for 20 to 25 minutes over moderate heat. When the tomatoes are soft, pass them through a sieve into another pot to make tomato puree. Simmer for a while to allow the water to evaporate. Season the sauce to taste with fresh butter, salt, pepper, and a little sugar. To refine the sauce, you can add various herbs at the end. If the sauce is a bit too thick, you can add a little vegetable stock.
