Fresh tomato sauce

Ingredients for 1 servings:

  • 15 tomatoes
  • 5 carrots
  • 1 celery
  • 6 onions
  • 8 cloves garlic
  • 5 sprigs basil
  • 5 sprigs of parsley
  • 6 tbsp olive oil
  • vegetable broth
  • salt and pepper
  • Wine
  • cream
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Ideal for freezing

Boil tomatoes briefly in water, then peel. Blend until liquid. Peel and grate carrots and celery. Chop onions and garlic into small pieces. Heat olive oil in a very large pan and sauté the onions. Add garlic, carrots, and celery. Now deglaze with the liquid tomatoes and simmer gently. Add vegetable stock. After at least 3 hours, season with salt and pepper. Add a splash of wine and a pinch of sugar. Add chopped basil and parsley. Eat a portion fresh, serve with a little cream, then place additional portions in small plastic containers and freeze.
