Ingredients for 4 servings:
- 1 ½ kg tomato(s) (vine tomatoes)
- 1 large onion(s)
- 3 large garlic cloves
- 200 g ham (Katenschinken), diced
- 2 tsp paprika powder, hot
- 2 tsp cane sugar
- 150 g tomato paste
- 250 ml red wine, milder (e.g. Portugieser)
- 1 tsp oregano, dried or fresh
- 1 tsp marjoram, dried or fresh
- 750 ml chicken broth or vegetable broth
- 8 sprigs of lemon thyme or
- Thyme
- 8 leaves of sage, fresh or
- basil
- 1 cup sour cream or creme fraiche
- 2 tbsp olive oil
- 125 g glass noodles

suitable for parties and simply delicious!
Remove the stems from the tomatoes, cut them crosswise, and place them in boiling water. Then place them in cold water, or better yet, in a bowl of iced water. In the meantime, finely dice the onion and garlic. Put the olive oil in a pot, sauté the diced onion, then add the ham and finally the finely diced garlic cloves. Sprinkle with the hot paprika, add the brown sugar, and also the tomato paste. Sauté everything until well combined. In the meantime, peel the tomatoes, remove the stems, and dice them. Add the diced tomatoes to the pot, simmer, deglaze with the red wine, and continue to reduce over low heat. In the meantime, boil some water, break the glass noodles into the desired size, pour hot water over them, and let them soak for 10 minutes. Now add the oregano and marjoram to the soup base (fresh is fine too), and pour in 750 ml of chicken or vegetable stock. Then drain the glass noodles and add them to the soup. Chop fresh lemon or regular thyme and add it to the soup. Lemon thyme has a wonderful aroma, but you probably won’t find it everywhere. To serve, add a dollop of sour cream to the soup and garnish with chopped fresh sage or basil! Don’t purée the soup! It’s supposed to be a filling soup with tomato chunks. But if you like it, fine… The idea for the glass noodles came from my husband, who loves tomatoes, and I’ll probably have to make this soup all the time now. Baguette, beer, and wine will do.
