- 500 g Asparagus white fresh
- 100 g Serrano ham
- 1 Lemon
- 2 tbsp Parmesan cheese
- Seasonal herbs, chives, parsley, rocket, lemon thyme, tarragon
- 2 tsp Extra virgin olive oil
- 20 g Butter
- 1 packet Hollandaise sauce canned
- Black pepper from the mill
- Potatoes
- Peel the asparagus diagonally and cut into 4-5 cm long pieces. Sort the herbs, wash and cut into small pieces.
- Heat the butter in a non-stick pan and fry the asparagus for about 10 minutes, depending on its thickness. Put a lid on at the beginning so that some water still escapes. This will cook the asparagus faster. Then fry with the lid open and turn more often.
- At the same time, heat the hollandaise sauce and prepare the potatoes. Arrange the ham on a plate, drizzle with olive oil and sprinkle with the herbs.
- Add coarse lemon zest and juice to the hollandaise. Place the asparagus on the ham, sprinkle with coarsely grated Parmesan and coarsely ground pepper. Serve with potatoes and sauce.
