Green asparagus with pine nuts

Ingredients for 4 servings:

  • 1 bunch of green asparagus
  • 1 tbsp olive oil
  • 2 tbsp pine nuts
  • salt and pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Oven cooked, for a barbecue evening, a tapas buffet or as a summer side dish

Wash the asparagus and trim off any woody ends. Pour the olive oil into a wide baking dish. Choose the size of the dish so that the asparagus fits in one or at most two layers so it cooks evenly and quickly. Add salt and pepper and stir briefly. Then add the asparagus and toss with the oil until evenly coated. Sprinkle the pine nuts over the asparagus and place it on the second-to-top rack of an oven preheated to 200°C. The dish is ready when the pine nuts are lightly browned and the asparagus is just firm to the bite (about 10 minutes). Goes well with dips such as aioli or hummus.
