Fried cauliflower Arabian style

Ingredients for 4 servings:

  • 1 cauliflower
  • 100 g cashew nuts
  • 50 g cranberries
  • 1 tbsp Ras el Hanout
  • e.g. sea salt
  • pepper
  • Oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

as a side dish or vegan dish

Wash the cauliflower and cut it into small florets. Using a food processor, chop it into small pieces. Don’t cook it for too long; it shouldn’t become mush, but rather have a consistency between rice and couscous. Sauté the raw cauliflower in a pan with oil for about 20 minutes; it should be lightly browned. Meanwhile, roast the cashews in a pan without fat. Towards the end of the cooking time, season with salt and pepper, and add the ras el hanout, cashews, and cranberries. It goes well with dark meat, but also makes a delicious vegan main course.
