Ingredients for 6 servings:

  • 100 g cucumber(s) (pickles)
  • 1 onion(s)
  • ½ bunch chervil
  • ½ bunch tarragon
  • ½ bunch parsley
  • 1 bunch of chives
  • 300 ml ketchup
  • 2 tsp mustard
  • 5 tbsp flour
  • ½ tsp salt
  • 2 eggs
  • 12 eggs, hard boiled
  • breadcrumbs
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the sauce, dice the cucumbers and onions. Wash the herbs and shake dry. Finely chop the herbs. Set aside about 2 tablespoons of mixed herbs (for decoration). Mix everything together. Add the ketchup and mustard to the cucumber and herb mixture and mix well. Set aside. For the breading: Put the flour and salt in a bowl, as well as the raw, beaten eggs and breadcrumbs in a bowl. Coat the eggs first in flour, then in the beaten egg and then in the breadcrumbs. Fry the eggs in hot oil for 2-3 minutes. Then drain well on kitchen paper. Serve with the sauce and enjoy lukewarm or cold.
