Gratinated Sesame Goat Cheese on Rapunzel with Honey Mustard Vinaigrette

Ingredients
 

For the honey mustard vinaigrette:

  • 2 tbsp Mayonnaise
  • 2 tsp Mustard medium hot
  • 2 tsp Honey
  • 4 tbsp Apple juice
  • 1 tbsp Vinegar
  • 4 tbsp Olive oil
  • 1 pinch Salt and pepper
  • 1 shot Crema di Balsamico

For the salad:

  • 5 Pc. Goat cheese thaler
  • Agave syrup
  • Sesame
  • 5 Pc. Rosemary sprigs
  • 300 g Lamb's lettuce
  • 10 Pc. Cocktail tomatoes

Instructions
 

  • For the dressing, mix all the ingredients together except for the oil in a salad bowl. Finally stir in the oil vigorously. It is best to mix the vinaigrette with a milk frother.
  • Brush both sides of the goat cheese with agave syrup and turn in sesame seeds. Preheat the oven to 180 degrees top heat. Then put the rosemary sprigs on top of the goat cheese. Bake the goat cheese thalers in a small baking dish for a maximum of 10 minutes until they start to melt.
  • In the meantime, wash the lamb's lettuce, pluck it and divide it on 5 plates. Halve the cocktail tomatoes and place 4 halves each on the lamb's lettuce. Finally, add the gratinated goat cheese and some crema de balsamic vinegar to the lamb's lettuce.
