Fried lychees with lemon and honey sauce

Ingredients for 4 servings:

  • 1 can lychee(s)
  • 250 ml light beer
  • 125 g flour (type 405)
  • 1 egg white, well chilled
  • 1 egg(s)
  • 4 tbsp honey
  • 1 tbsp sherry wine, white, dry
  • 1 tsp. baking soda
  • 1 point ice cream (vanilla)
  • Fat, for frying
  • Lemon balm, a few leaves

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mix the flour, beer, the whole egg, and baking soda to make a batter. Cover and let stand for about 15 minutes. Beat the chilled egg whites until stiff and fold into the batter. Drain the lychees thoroughly and pat dry. Combine the honey, lemon juice, and sherry in a saucepan and heat. Dip the lychees into the batter and fry until light brown. Drain on kitchen paper. Arrange the vanilla ice cream and lychees on a plate. Pour the lemon and honey sauce over the lychees. Garnish with the lemon balm leaves.
